Quick easy and most importantly delicious... Oh yea healthy too.
What you need to get started:
2 Cans Bumble Bee Pink Salmon
2 Tbsp red bell pepper finely chopped
2 Tbsp green bell pepper finely chopped
1 Small Onion (1/2 large) finely chopped
1 Small lemon/lime
3/4 cup seasoned bread crumbs or planko
1/4 cup fat free or olive oil mayo
1 tsp red pepper flakes (optinal)
1 tsp sweet paprika
Preheat oven to 350 degrees
Drain and bone salmon add to large bowl
Cut and squeeze lemon juice over salmon
Add onions, peppers, and breadcrumbs
In a separate bowl mix black pepper, paprika and red pepper flakes with mayo
Add mayo to salmon mixture... I prefer to slap some gloves on and get my hands in there but a fork works just fine. Mix evenly to the best of your abilities.
Grease a baking pan/sheet and create patties with hands and place on pan or use a muffin pan to get nice round cakes.
Bake for 15 minutes enjoy #BeTheSnack
