What you need to get started...
4 to 5 Ripe Plantains
1.5 lbs Ground Turkey
16oz Can of Tomato Sauce (del monte garlic oregano basil- sea salt)
1 Small Green Bell Pepper
1 Onion
3 Heads of Garlic (grated or finely chopped)
2 Cups Shredded Mexican Blend Cheese
1 Can of Black Beans
Olive Oil
Black Pepper
Garlic Salt
2 Eggs
9×13 Baking Pan
Preheat the oven to 350°. Peel And slice your plantains.
Pour 1/4 cup of oil into the frying pan and fry plantains to golden brown. Place fried plantains on a plate lined with paper towels to absorb the excess oil. Set aside to cool.
In a skillet heat 2 tablespoons of olive oil over medium heat and add onions, peppers, and garlic... allow to saute for a few seconds then add ground turkey.
Add garlic salt, black pepper and cook until done, then add tomato sauce and black beans. Allow to simmer under low heat for about 6-8 minutes.
Grease the bottom and sides of the baking pan and assemble as followed. Layer with the plantains at the bottom of pan and top with half of turkey and black beans filling, then top with 1 cup cheese mix.
Repeat starting with plantain and ending with cheese. Pour beaten eggs evenly on top of the cheese. Place in oven and bake for 30 to 40 minutes . Cool for a minimum of 10 minutes and enjoy. #BeTheSnack
So I finally made this lasagna!!! and let me tell you!! it was gone by the time I came up for seconds. sooo yummy, my family and I enjoyed it so much! AND I don't think I am going back to basic lasagna anymore lol.
