Plantain Breakfast Delight

The perfect way to get your day started...


What you need to get started

with SaltFish and Spinach

  • 1 Plantain per sandwich

  • 1 Tomato

  • 2 Cups of Fresh Spinach

  • 2 Bell Peppers (Green and Red)

  • 1 lb of Boneless Codfish (SaltFish)

  • 1 Onion

  • 1 Tbsp Parsley

  • Black Pepper

  • Curry

  • Olive Oil

  • 1 Head of Garlic


With Turkey and Eggs

  • 1 Plantain Per Sandwich

  • 2 Eggs (per sandwich)

  • Sliced Turkey (I like Hillshire's Honey Roasted)

  • 1 Tsp of Avocado Butter

  • Sliced Pepper Jack Cheese

Your plantain will make or break your sandwich, so here is an example of what I consider a perfect one...

Any greener than that you will have difficulty mashing it into a patty because it will be too dry and break into pieces. Too ripe and it will not hold together. Peel and place the plantain in the oven at 400 degrees. Roast it for approximately 40 mins then cut in half and flatten into patties... You will need to use your hands to perfect the shape of the patty and once that is done return it to the oven for 10-15 mins so it can mend.. For your Saltfish and Spinach sandwich boil your saltfish to desalt. Chop and saute the garlic, onion and peppers. Season to taste with curry, parsley and black pepper. Add the saltfish to the saute. Saute the spinach along with some garlic. Slice the tomato and build your sandwich...


Your Turkey, Egg and Cheese doesn't have as many moving parts. Lol. Simply fry your egg and build your sandwich with the other ingredients. Enjoy and don't forget to Be the Snack.
